My aunt Pat gave me a recipe for delicious zucchini patties that appease my appetite without fail. – Travel Animal Doctor
It takes 10 minutes to make and works as the perfect appetizer for any meal.
5 to 6
1 cup Bisquick
1/2 cup shredded mozzarella or cheddar cheese
1/8 teaspoon salt
2 eggs, beaten
2 cups shredded zucchini
2 tablespoons chopped onion (optional)
1 tablespoon butter
Combine Bisquick, cheese, salt, eggs, zucchini and onion in a mixing bowl. Blend well.
Melt butter in a large skillet. Spoon heaping tablespoons of zucchini mixture into skillet. Fry for 3-5 minutes per side, until golden brown. Place browned patties on a paper towel.
Add more butter to skillet when necessary for additional batches.
Dip zucchini patties in marinara sauce or eat with sour cream for some added zest and flavor.
This appetizer is a great snack with marinara sauce. I could also see pairing it with an Italian meal, like spaghetti and falafel meatballs. The ingredients are healthy, and the recipe could easily be turned into a vegan recipe by replacing the cheese and butter with vegan alternatives.
I have not had much luck finding vegan cheese that I enjoy, so if any vegans are reading this recipe and know of a brand, I would love to hear some tasty options to test. As cheese is just one ingredient of many, I would have no problem using any vegan cheese in this recipe. Eating vegan cheese alone is when I have always been disappointed.
The use of marinara sauce adds extra flavor to this appetizer. I have never cared for sour cream, so have not tried it with these patties. As a fan of spicy foods, I could also see using salsa instead of marinara with these patties. I would also really like mixing salsa up with marinara sauce and using it as a dip for these patties.
Alongside a meal, they are filling and they add great flavor and nutritional value to any dish. For a few of the patties I tried to add spicy seasoning into the batter, and it did not come out right. The next time I make this recipe, I will most likely stick to eating it with salsa instead of tampering with any of the batter.
