When I got married it was the summer of my 2nd year of veterinary school. Becoming a veterinarian is no easy task. That summer, as I did every summer, I was working at an internship. My husband and I decided to have a destination wedding in order to get married quickly without having to worry about a lot of planning. The one thing about having a destination wedding is that we did not have much family there with us. As a wedding gift my mother had all of our family members write a vegetarian recipe for my husband and me.
The result was a wonderful organizer full of delicious looking vegetarian and vegan recipes written and signed by family members.
I have been a vegetarian for years, and was a vegan for two years. This organizer meant a lot to me. Not only did it help me feel accepted for my lifestyle choice by my family, but it also helped me to feel as if everyone was there with us in spirit for our big day.
According to the USDA, the majority of Americans spend 67 minutes a day primarily just eating.
This is often also when we can spend quality time with our families and friends. Eating dinner with my husband is one of the highlights of my day. I get so much gratification from these vegetarian and vegan recipes and am eager to share them so that others can enjoy them too.
