It’s Almost Smoothie Season! – Travel Animal Doctor

Since it is almost smoothie season, what are you going to drink? -Travel Animal Doctor Swimsuit season is on my mind with the winter weather behind us.  This can only mean one thing: It’s almost smoothie season! Smoothies are a summer favorite in this household. Benefits of smoothies include: 1) Jam-packed with fruit and vegetables to help fulfill your daily requirement 2) Natural vitamins and minerals 3) Naturally sweet taste without having to use sugar Nutritious Basically, smoothies are both nutritious and delicious. This morning the Nutri-Bullet was dusted off and put to work. A specific recipe was not followed since there were a hodge-podge of ingredients in the fridge. It is fun to experiment with new combinations sometimes however you do not always know how they will turn out. Following a recipe that is tried and true helps you to find one that will appease your taste buds. The only con about following a recipe is having the necessary ingredients. Because it almost smoothie season upon us, I will be adding healthy recipes that I thoroughly enjoy as I try them. Until then, I would like to discuss my favorite smoothie ingredients. My favorite ingredients to smoothies are: Unsweetened Almond Milk Frozen Kale Original Greek Yogurt Chia Seeds Fruit Seeds and Nuts I did not have chia seeds for this particular smoothie. I like using chia seeds because they are a powerful addition to any diet. They taste great in a smoothie, and supplement omega-3 fatty acids, fiber and some protein into your diet. Sopapilla Cheesecake – Travel Animal Doctor

My Aunt Jan gave me the sopapilla cheesecake recipe that is absolutely to die for. – Travel Animal Doctor Have you ever had sopapilla ice cream from a Mexican restaurant? This cheesecake reminds me of that type of ice cream, except it is not as cold on the inside, and it is creamier. It is hard to describe this recipe other than to say it is one of the most delicious dishes of dessert I have ever prepared. This gourmet dessert serves up to 12 people, but it sits well in the refrigerator and can be made for a group as little as 2. Since it is 12 servings, it did take us about a week to eat it all up. While it would be a pretty unhealthy breakfast, I could also see spoiling myself one morning with a small serving. Served with a few cherries or strawberries on the side, it could be a little bit healthier to eat for breakfast. It serves twelve people and takes thirty minutes to cook. Preheat oven to: 350 degrees Ingredients: 2 cans crescent rolls 8 oz pkg. cream cheese (softened) 1 tbsp. cinnamon 1 stick real butter 2 cups sugar Directions: 1) Spray “9×12” baking dish with PAM. 2) Spread 1 can crescent rolls evenly in dish. 3) Blend 1.5 cups sugar with cream cheese. 4) Spread mixture over rolls. 5) Open second can of rolls and spread over cream cheese mixture. 6) Melt butter and pour over rolls. 7) Mix remaining 0.5 cup of sugar and cinnamon and sprinkle over top until butter is evenly covered. Travel Animal Doctor: Crock Pot Macaroni and Cheese

This delicious Crock Pot Macaroni and Cheese recipe was given to me by my husband’s mother, Mrs. Miller. – Travel Animal Doctor I had extra fun preparing the dish because since we just moved in not too long ago I could not find our big crockpot. Instead I used this small crockpot, and the food was overflowing! If you do the full recipe a large crockpot is needed. Alas, I got some pictures of the finished product, and it was absolutely amazing! Cooking time: 3 hrs 45 min Ingredients: 8 oz macaroni cooked 4 cups cheddar cheese 12 oz can evaporated milk 2 eggs whisked 1 ½ c. milk ½ stick melted butter Salt, pepper, paprika Instructions: Put crock pot on low. Add cooked macaroni, 3 cups cheese, evaporated milk, eggs, milk, butter, salt, pepper and mix. Sprinkle last cup of cheese on top and paprika, keep on low and cook for 3 hrs 45 minutes. Crust will form on edges. Best macaroni and cheese. My Take on the Recipe You may see a hint of green bean below the macaroni and cheese in the picture because my husband mixed the two up when he ate it. This mac and cheese paired perfectly with the green beans. The recipe is our go to recipe when we are craving cheese. Sometimes we also cut up vegetarian hot dogs to mix in the mac and cheese. Other times we eat the hot dogs as a quick main dish and eat the mac and cheese as a nice side dish alongside of green beans or another tasty vegetable such as corn. With the addition of...

Baked Cream Cabbage -Travel Animal Doctor

This baked cream cabbage recipe was given to me by Ruth Kerekgyarto. -Travel Animal Doctor She will forever be in our hearts. Every time we have this dish we will be thinking of her. Preheat oven to: 350 degrees Ingredients: 1 medium head cabbage 3 Tbl butter 3 Tbl flour 1/2 tsp salt 1.5 cups milk 1/2 c. cracker or bread crumbs Directions: Shred cabbage fine. Cook about 7 minutes in boiling salt water. Drain and arrange in buttered casserole. Make white sauce of butter, flour, salt and milk. Pour over cabbage. Sprinkle with bread crumbs. Bake in moderate oven 350 degrees Fahrenheit until brown. The baked cream cabbage casserole is ready to be served. My Review I really enjoyed this recipe because it made so much with so little ingredients. I did not have to eat a whole lot of it for it to fill me up. My husband did not care for the recipe because he likes a bit more flavor. He also thought the consistency was a bit watery for his tastes. With the right side dishes I think this main dish would be a great meal. All of the ingredients to create the casserole are relatively cheap. As someone who wants to eat healthy, is watching her weight, and is living on a budget, I would make this dish again. What I Would Change Since my husband did not like the consistency, I would probably just play with making it less watery.
