  • 1 c. feta cheese
  • 1/2 c. ricotta cheese
  • 2 lbs spinach, rinsed and chopped
  • 1/2 c. parsley (if preferred)
  • 1 large onion
  • 1/4 c. avocado oil
  • 1/4 c. pine nuts
  • 8 sheets phyllo dough

Spinach pine nut phyllo pie: Enough sustenance to fuel any dragon’s fire. Spinach, pine nuts and onions


  1.   Preheat oven to 350 degrees Fahrenheit and oil your pie pan with a thin layer of avocado oil.
  2. Heat 3 TBS of avocado oil in a large skillet over medium heat.
  3. Saute onion, and pine nuts until together they are lightly browned.
  4. Stir in spinach (with parsley if preferred) and saute until limp, 2 minutes.
  5. Remove from heat and set aside until cool.
  6. Mix eggs and cheese, then stir in the spinach mixture.
  7. Put 1 sheet of phyllo dough on the bottom of the pie pan and brush lightly with avocado oil.
  8. Lay another sheet on top with avocado oil overtop and continue the process with a total of 4 sheets overlapping the pan.
  9. Spread cheese and spinach into the pie pan and fold dough over filling.
  10. Brush with avocado oil, then layer remaining 4 sheets of phyllo dough overtop to seal the pie.
  11. Bake spinach pine nut phyllo pie for 30 to 40 minutes until golden brown, and it is ready to serve!
