- 2 lbs spinach, rinsed and chopped
- 1/2 c. parsley (if preferred)
- 1 large onion
- 1/4 c. avocado oil
- 1/4 c. pine nuts
- 8 sheets phyllo dough

- Heat 3 TBS of avocado oil in a large skillet over medium heat.
