Make a change this Valentine’s Day. Switch out those annual chocolates for sweets created with a personal touch. Satisfy your significant other’s sweet tooth with this dulce potato candy. The typical kitchen ingredients are often found in kitchen cupboards, allowing the chef to make this last minute oftentimes without having to make a run to the grocery store.
- 1/4 c. mashed potato
- 2 TBS almond milk
- 16 oz. powdered sugar
- 1 tsp. vanilla extract
- 1/3 c. peanut butter
- 1 pinch salt
- 1 TBS powdered sugar (for dusting)
- Combine potatoes, vanilla, almond milk and salt in a bowl and stir until mixed completely.
- Stir sugar into potato mixture, until dough is slightly firm.
- Refrigerate dough for around an hour to chill.
- Sprinkle a thin layer of powdered sugar on wax paper and roll out the dough.
- Spread thin layer of peanut butter on top of the rolled out potato candy dough.
- Roll the dough like you would tortilla wraps to shape pinwheels, and refrigerate to chill for another hour.
- Slice pinwheels and shape into hearts to serve.

The consistency of the dough is slightly firm, easily malleable to flatten. The dough can immediately be rolled out when firm. Alternatively after making the dough, it can be refrigerated for an hour to allow for the dough to become chilled. Smoothing out the dough may be easier after letting the dough set and chill in the refrigerator.

Often the center of the potato candy is thicker than the ends. In order to even out the candies, peanut butter can be pushed to the corners of the dough. The tighter the pinwheel, the neater the end result will be. Once the roll is made, it can be cut by 1.5 cm slices. In order to form the heart shape, just pinch the center of the pinwheel together to allow two rounded out points at top. The bottom can be curved sharply for the point of the valentine heart.
