Today my mother and I made up a scrumptious smoothie that we decided to call the Island Days Smoothie. -Travel Animal Doctor
This week I am in Chattanooga, Tennessee for a visit with my parents. My mom and I enjoy experimenting with recipes in the kitchen. We both enjoy the nutritional value that we get from the natural ingredients in smoothies.
It is great being able to control what we eat through the use of nourishing and substantial ingredients. The smoothie we created today really put a smile on our faces. It reminded me of a pina colada, except without the coconut. I could picture the advantage of adding coconut milk or the fruit to the smoothie if it happened to be available in the kitchen. This healthy smoothie takes 5 minutes to make and is subtly sweet.
The only fruits you need to recreate this island days smoothie are pineapple, 1/2 of a lemon, and cherries for garnish. Honey and ground ginger add to the already sweet flavor from the pineapple. We used almond milk, but as already stated, coconut milk would make the island days smoothie taste more like a pina colada. With a little bit of ice to make the island days smoothie extra refreshing, our midday snack was complete.

The ground ginger appears in the back, with the honey by its side and pineapple chunks on the end. Featured in front is greek yogurt and 1/2 of a lemon.
Island Days Smoothie
1 1/2 c. pineapple
1 tsp ground ginger
2 TBS honey
1/2 c. almond milk
1/2 c. plain greek yogurt
3 ice cubes
2 cherries for garnish (optional)
Around three 8 oz servings
Put pineapple, ground ginger, honey, lemon, almond milk, greek yogurt and 3 ice cubes into blender and blend. Add cherries for garnish for your guest. Enjoy!
If you are looking for a quick and healthy sugar fix and a blender is near, the island days smoothie is perfect. The sugars from these natural ingredients (pineapple and honey) are sure to satisfy your craving for sweets. Snacking is not always bad especially when the snack is nutritious. If you start your days really early like I do, a midmorning pick up is necessary. If you get too busy with what you are doing and tend to skip breakfast or lunch on occasion, this island days smoothie, full of nutritious ingredients, will beat another cup of coffee or snack hands down.
