Ingredients:

  • 1 medium head of cabbage
  • 1 green pepper
  • 1 carrot
  • 1 tsp. mustard seed
  • 1 tsp. salt
  • 1 tsp. celery seed
  • 1/4 c. water
  • 1 c. vinegar

Serving Size:

  • 12 servings

Directions:

  1. Grate the cabbage, carrot, and pepper.
  2. Add salt to the grated vegetables and let stand for 1 hr.
  3. In another bowl, mix water, vinegar, mustard seeds, and celery seeds.
  4. Cook mixture for one minute and cool until mixture is lukewarm.
  5. Pour mixture overtop of the vegetables.
  6. Completely mix the bowl of vegetables with the dressing.
  7. Enjoy your Halt family cole slaw!

My Review:

I enjoyed making this family cole slaw recipe because it did not take much time to prepare. I was able to prepare it in the morning and stick it in the refrigerator for our bigger dinner later this evening. It is also a great way to get the daily intake of some extremely healthful nutrients.

Cabbage is an extremely versatile vegetable, and it offers many health benefits to vegetarians. Cabbage is great for weight loss and is stock full of fiber and vitamins. It is an anti-inflammatory food, and is even said to help with concentration and other mental functions. I am always on the look out for cabbage recipes, and this family cole slaw fits the bill.

I do not normally eat raw carrots, and cooked carrots are even worse.  When I cut up the carrot and mix it in with the rest of the cole slaw recipe, I am actually able to enjoy the taste of the carrot, and benefit from the Vitamin A and beta carotene. Finally, I have always been a fan of peppers, and the use of green pepper in this recipe is no exception. Cumulatively I find this Halt family cole slaw to be a family recipe home run.
