- Pinch of saffron
- 1/2 tsp. of salt
- 1 c. chopped onion
- 1 c. chopped carrots
- 1 c. of white rice
- 2 TBS of olive oil
- 1 TBS curry powder
- Melt butter in small saucepan over medium heat.
- Add and cook onion until it is translucent and soft for 3 minutes.
- Add rice to coat with olive oil and cook on stove for 2 minutes.
- Stir in the saffron, salt and curry powder.
- Turn the heat to low and let the rice bake.
- Cook until rice is tender and has absorbed all the liquid 15 minutes.
- Remove from heat, and let the rice rest for 5 minutes before serving.
