  • Pinch of saffron
  • 1/2 tsp. of salt
  • 1 c. chopped onion
  • 1 c. chopped carrots
  • 1 c. of white rice
  • 2 TBS of olive oil

  1. Melt butter in small saucepan over medium heat.
  2. Add and cook onion until it is translucent and soft for 3 minutes.
  3. Add rice to coat with olive oil and cook on stove for 2 minutes.
  4. Stir in the saffron, salt and curry powder.
  5. Turn the heat to low and let the rice bake.
  6. Cook until rice is tender and has absorbed all the liquid 15 minutes.
  7. Remove from heat, and let the rice rest for 5 minutes before serving.
