This Minty Cocoa Avocado Smoothie offers the sustenance and energy our family needs in the morning. Ingredients: 2 c. spinach 1 c. chocolate protein powder 1/2 c. water 1 c. unsweetened almond or coconut milk Drop of mint extract OR 1/4 c. mint 1/2 avocado 1 TBSP chocolate chips 4 ice cubes 1 TBSP honey Preparation Time:      10 minutes Serving Size: Serves 1 Directions: Put ingredients in a blender. Blend ingredients until smooth and creamy texture is accomplished. Enjoy your Minty Cocoa Avocado Smoothie! My Review: Combating that fog over my mind in the morning is sometimes no easy feat. While I enjoy coffee every once and a while it is not my go to drink. Since I do not often have caffeine, when I do drink coffee it sometimes makes me jittery for five minutes and then suddenly my energy level plummets. I do not get this same response with the minty cocoa avocado smoothie.  This cocoa avocado smoothie wakes me up and seems to clear that fog away for the rest of the day. The green color can be quite intimidating to those who do not regularly drink smoothies.  While it looks quite bizarre and border-line unappetizing, the taste proves my eyes wrong every time. The cocoa and mint flavors are the prominent tastes in the smoothie. I attribute the creaminess of the smoothie to the avocado and milk. Possible Modifications: Change Thickness: While I only used 1/2 c. of water, I could probably add another 1/2 c. of water if I wanted to adjust the thickness of the smoothie. Zesty Asparagus and Kale Pasta

This zesty asparagus and kale pasta recipe was a fresh and tasty light meal, perfect to eat after a long and strenuous day. Follow the zesty asparagus and kale pasta recipe to try it for yourself.   Asparagus is one of my favorite vegetables. I enjoy it so much, that this dish instantly attracted me and made me want to try it. This was the first time that I have made something with asparagus in it. Usually I eat cooked asparagus by itself. This recipe gave me the opportunity to taste it in a dish. The lemon zest paired well with the asparagus, and together they made the dish taste light and fresh. Ingredients: 12 oz wheat pasta dry 1 c. pasta water 3 c. vegetable stock 2 tbsp cornstarch 1 bunch kale (large pieces cut) 1 lb asparagus, cut to 2 inch long pieces 1 lg crushed garlic clove 1 1/4 tsp salt 1 oz Parmesan cheese, grated 1/4 c. Greek yogurt, plain 1 lemon, sliced and zest Parmesan cheese and ground black pepper (garnish) Serving size: 6 Directions: 1) Cook pasta via directions on package and put aside 1 c. of the pasta water for later 2) Preheat skillet on medium and add 2 c. vegetable broth. 3) Bring to a boil. 4) Whisk cornstarch in 1 c. of vegetable broth and add it to the skillet. 5) After broth becomes thick, add salt and asparagus. 6) Stir asparagus, and vegetable stock mixture. 7) Set heat on low and use a lid to cover the asparagus. 8) Let cook for 4 minutes. 9) Dissolve parmesan cheese into the mixture...

Inspire Greytness nominated me for a post called 8 Photos of Happiness from Ariel’s Little Corner of the Internet. My 8 photos express reasons for wanting to become a veterinarian as well as reasons that make me happy I am a veterinarian. They are my old family pets, my mom and dad’s pets, and Jade. These animals had and still have a way of making my frown turn upside down. Just sorting through these photos flooded me with   joyous memories.   Meet Scar. My husband and I found him sick at a shelter. He was so sweet and loving, and he rolled around and played with us for a straight 15 minutes before we decided we had no choice but to take him home. He was our first pet, and he was adorable. He was such a cuddler, and always had to sleep on one of our heads at night. Sadly one evening he slipped out of a crack in the door. We looked for him everywhere but he never came back. We talk about getting another cat all of the time. One of these days we will. While growing up, we had a samoyed named Bayer. He was the sweetest dog our family has ever had. He was big and docile. The family who had him before us called him moose because he was so big. I smile whenever I see that precious face. Maggie was our family sheepdog. She was smart as a whip. I remember training her to pull at a pulley on command, that would elevate a basket to the top of our tree...
