My sister in law, Nicole Claudio, gave me this oyster cracker snack recipe, and it is a really tasty and healthy snack. – Travel Animal Doctor It takes about 5 minutes to prepare. A handful is great when you just need a quick snack between meals. Ingredients: 24 oz. Oyster Crackers 1.5 cup vegetable oil 1 pkg. Original Ranch dressing (dry mix) 1/2 tsp. garlic salt or powder 1 Tbl. dill weed Directions: Mix oil, dressing, garlic salt and dill weed in a large bowl.  Add crackers and stir to coat completely.  Stir occasionally for next several hours. Using a plastic bowl with a tight lid works well as you can shake, roll or just keep turning over the whole bowl.  For best flavor, let set several hours or overnight before eating. Review I make this snack whenever I am craving something salty. While you can use vegetable oil or olive oil, the last three times our family had this prepared snack, coconut oil was used instead. The ranch and dill flavoring is delicious. While you can taste a hint of sweetness from the use of coconut oil in some meals, this snack still mostly tastes like ranch and dill. I depend on this snack heavily because it is relatively cheap and easy to prepare, it lasts, and it is extremely healthy. Making it myself allows me to be in control of the majority of ingredients used to prepare the snack. It also keeps my husband and I from buying salty snacks from the store with excess fats. Travel Animal Doctor: Crock Pot Macaroni and Cheese

This delicious Crock Pot Macaroni and Cheese recipe was given to me by my husband’s mother, Mrs. Miller. – Travel Animal Doctor I had extra fun preparing the dish because since we just moved in not too long ago I could not find our big crockpot. Instead I used this small crockpot, and the food was overflowing! If you do the full recipe a large crockpot is needed. Alas, I got some pictures of the finished product, and it was absolutely amazing! Cooking time: 3 hrs 45 min Ingredients: 8 oz macaroni cooked 4 cups cheddar cheese 12 oz can evaporated milk 2 eggs whisked 1 ½ c. milk ½ stick melted butter Salt, pepper, paprika Instructions: Put crock pot on low. Add cooked macaroni, 3 cups cheese, evaporated milk, eggs, milk, butter, salt, pepper and mix. Sprinkle last cup of cheese on top and paprika, keep on low and cook for 3 hrs 45 minutes. Crust will form on edges. Best macaroni and cheese. My Take on the Recipe You may see a hint of green bean below the macaroni and cheese in the picture because my husband mixed the two up when he ate it. This baked cream cabbage recipe was given to me by Ruth Kerekgyarto. -Travel Animal Doctor She will forever be in our hearts. Every time we have this dish we will be thinking of her. Preheat oven to: 350 degrees Ingredients: 1 medium head cabbage 3 Tbl butter 3 Tbl flour 1/2 tsp salt 1.5 cups milk 1/2 c. cracker or bread crumbs Directions: Shred cabbage fine. Cook about 7 minutes in boiling salt water. Drain and arrange in buttered casserole. Make white sauce of butter, flour, salt and milk. Pour over cabbage. Sprinkle with bread crumbs. Bake in moderate oven 350 degrees Fahrenheit until brown. The baked cream cabbage casserole is ready to be served. My Review I really enjoyed this recipe because it made so much with so little ingredients. I did not have to eat a whole lot of it for it to fill me up. My husband did not care for the recipe because he likes a bit more flavor. He also thought the consistency was a bit watery for his tastes. With the right side dishes I think this main dish would be a great meal. All of the ingredients to create the casserole are relatively cheap. As someone who wants to eat healthy, is watching her weight, and is living on a budget, I would make this dish again. What I Would Change Since my husband did not like the consistency, I would probably just play with making it less watery. Zucchini Patties – Travel Animal Doctor

My aunt Pat gave me a recipe for delicious zucchini patties that appease my appetite without fail.  – Travel Animal Doctor It takes 10 minutes to make and works as the perfect appetizer for any meal. Serves: 5 to 6 Ingredients: 1 cup Bisquick 1/2 cup shredded mozzarella or cheddar cheese 1/8 teaspoon salt 2 eggs, beaten 2 cups shredded zucchini 2 tablespoons chopped onion (optional) 1 tablespoon butter Optional: Marinara sauce Sour cream Directions: Combine Bisquick, cheese, salt, eggs, zucchini and onion in a mixing bowl.  Blend well. Melt butter in a large skillet. Spoon heaping tablespoons of zucchini mixture into skillet. Fry for 3-5 minutes per side, until golden brown.  Place browned patties on a paper towel. Add more butter to skillet when necessary for additional batches. Dip zucchini patties in marinara sauce or eat with sour cream for some added zest and flavor. My Review This appetizer is a great snack with marinara sauce. I could also see pairing it with an Italian meal, like spaghetti and falafel meatballs. The ingredients are healthy, and the recipe could easily be turned into a vegan recipe by replacing the cheese and butter with vegan alternatives. I have not had much luck finding vegan cheese that I enjoy, so if any vegans are reading this recipe and know of a brand, I would love to hear some tasty options to test. As cheese is just one ingredient of many, I would have no problem using any vegan cheese in this recipe. Eating vegan cheese alone is when I have always been disappointed. Vegetarian and Vegan Recipes- Travel Animal Doctor

Travel Animal Doctor here, eager to share my vegetarian and vegan recipes with you, as well as ones that I come across that look good. When I got married it was the summer of my 2nd year of veterinary school. Becoming a veterinarian is no easy task. That summer, as I did every summer, I was working at an internship.  My husband and I decided to have a destination wedding in order to get married quickly without having to worry about a lot of planning.  The one thing about having a destination wedding is that we did not have much family there with us.  As a wedding gift my mother had all of our family members write a vegetarian recipe for my husband and me. The result was a wonderful organizer full of delicious looking vegetarian and vegan recipes written and signed by family members. I have been a vegetarian for years, and was a vegan for two years.  This organizer meant a lot to me. Not only did it help me feel accepted for my lifestyle choice by my family, but it also helped me to feel as if everyone was there with us in spirit for our big day. According to the USDA, the majority of Americans spend 67 minutes a day primarily just eating. This is often also when we can spend quality time with our families and friends.  Eating dinner with my husband is one of the highlights of my day.
