French Onion Grilled Potatoes The 4th of July is right around the corner, and I am already “chomping at the bit” to grill these french onion grilled potatoes. In fact, who really needs a holiday to enjoy good food? We may need to grill these tonight. As a vegetarian, by completely removing a food group, I have become pretty inventive with my meals. Sometimes they turn out to be complete disasters, in which case I may write about a few of my disasters to warn you what NOT to do. After all, it is more fun to hear and learn from other people’s mistakes rather than doing it yourself!   So while this was an invention, I found these french onion grilled potatoes were a delicious success. I want to credit my mom for thinking it up, in place of ingredients we didn’t have. The next time I use this recipe, I will be either adding more onion soup dry mix or using tin foil. I could not get enough of that french onion flavor. While in these photos we used skewers, I could see the advantage of using tin foil in order to keep the potatoes soaking in that tasty french onion flavor while sitting on the grill. Ingredients: 2-3 Potatoes 1 packet of Lipton French onion soup dry mix 1/4 c. The peanut buttana smoothie tastes similar to a healthy version of a peanut butter and banana sandwich. – Travel Animal Doctor If you are trying to avoid the night munchies, this peanut buttana smoothie works as a good substitute to the usual chips and dip. While there is a very banana flavor to this smoothie, the smooth peanut butter and greek yogurt taste ensures that the banana does not overpower the drink. As you can tell, the photographs were taken as the sun was setting. This was a true night time treat to stave off my urge to snack while watching my evening shows. The great thing about putting bananas in a smoothie is that if your bananas are extra ripe you can throw them in a smoothie instead of having to throw them away. This of course should be done at your own discretion, as I do not condone using bad bananas. 😉 Ingredients  The ingredients pictured below are the majority of ingredients within the recipe with the exception of the unsweetened almond milk and cinnamon. In front are the chia seeds, with the greek yogurt to the right side. Today my mother and I made up a scrumptious smoothie that we decided to call the Island Days Smoothie. -Travel Animal Doctor This week I am in Chattanooga, Tennessee for a visit with my parents. My mom and I enjoy experimenting with recipes in the kitchen.  We both enjoy the nutritional value that we get from the natural ingredients in smoothies. It is great being able to control what we eat through the use of nourishing and substantial ingredients. The smoothie we created today really put a smile on our faces. It reminded me of a pina colada, except without the coconut. I could picture the advantage of adding coconut milk or the fruit to the smoothie if it happened to be available in the kitchen.  This healthy smoothie takes 5 minutes to make and is subtly sweet. The only fruits you need to recreate this island days smoothie are pineapple, 1/2 of a lemon, and cherries for garnish. Honey and ground ginger add to the already sweet flavor from the pineapple. We used almond milk, but as already stated, coconut milk would make the island days smoothie taste more like a pina colada.  With a little bit of ice to make the island days smoothie extra refreshing, our midday snack was complete. My Aunt Jan gave me the sopapilla cheesecake recipe that is absolutely to die for. – Travel Animal Doctor Have you ever had sopapilla ice cream from a Mexican restaurant? This cheesecake reminds me of that type of ice cream, except it is not as cold on the inside, and it is creamier. It is hard to describe this recipe other than to say it is one of the most delicious dishes of dessert I have ever prepared. This gourmet dessert serves up to 12 people, but it sits well in the refrigerator and can be made for a group as little as 2. Since it is 12 servings, it did take us about a week to eat it all up. While it would be a pretty unhealthy breakfast, I could also see spoiling myself one morning with a small serving. Served with a few cherries or strawberries on the side, it could be a little bit healthier to eat for breakfast. It serves twelve people and takes thirty minutes to cook. Preheat oven to: 350 degrees Ingredients: 2 cans crescent rolls 8 oz pkg. cream cheese (softened) 1 tbsp. cinnamon 1 stick real butter 2 cups sugar Directions: 1) Spray “9×12” baking dish with PAM. 2) Spread 1 can crescent rolls evenly in dish. 3) Blend 1.5 cups sugar with cream cheese. 4) Spread mixture over rolls. 5) Open second can of rolls and spread over cream cheese mixture. 6) Melt butter and pour over rolls. 7) Mix remaining 0.5 cup of sugar and cinnamon and sprinkle over top until butter is evenly covered. This is the best pasta salad from travelanimaldr.com.  It is easy to make and even easier to clean up. Make it Vegan: There are cheeses available for vegans. You can add and detract vegetables from this recipe to your tastes. I have had corn and vegetarian pepperoni instead of bacon with this pasta before. Easy Clean Up: If you do not want to dirty a bowl you can add ingredients to gallon sized bags and shake them up. This also saves up some room in the refrigerator. Ingredients: 8 oz Rotini noodles 1 cup of Italian dressing 1 box of Morningstar bacon 8 oz cheddar cheese 1 tomato 1 orange pepper 1 can of sliced olives 6 oz cauliflower 1/3 medium onion cilantro to taste Directions: Follow directions on box to boil rotini noodles in water and strain. Microwave Morningstar bacon for 1 1/2 minutes (follow directions on back of box if using a different amount). Cut up pepper, tomato, onion, bacon and cauliflower to bite sized pieces. Cut up cheddar cheese into small cubes. Combine cheese, tomato, pepper, cauliflower, onion, bacon, and noodles and mix well. Add 1 cup of Italian dressing. Set in refrigerator to cool. Ready to serve after cooled. My Review This is truly the best pasta salad and it has been my personal favorite side dish for as long as I can remember. The beauty of the recipe is that you can take away and add ingredients as you like.
