Orange Sangrita on the Rocks – Travel Animal Doctor

Relive the essence of summer with this orange sangrita drink in hand. – Travel Animal Doctor Ingredients: 12 oz. Limeade (Frozen) 1 mandarin orange 4 oz triple sec 1 lime 8 oz. tequila 12 oz. Mexican beer of choice (Dos Equis, Corona, or Tecate for example) Margarita or sea  salt for the rims Ice   Instructions: Unpeel the mandarin orange and chop into bite sized pieces. Slice the lime. Mix together the triple sec, tequila, mexican beer and limeade in a large pitcher.  Stir in the frozen limeade until completely uniform with the rest of the fluids. Add ice and mandarin orange bits into the pitcher and stir. Save a few whole slices of lime to place on your glass rims, while adding the rest into the pitcher. Wet the rim of your glass and add salt to the rim edges. Fill your glass with the finished orange sangrita. Add an umbrella for an extra beachy feel. Wah la! Raspberry Inspired Key Lime Pie- Travel Animal Doctor

If you are looking for a sweet and tasty dessert, look no further than this Raspberry Inspired Key Lime Pie recipe. – Travel Animal Doctor Creating this pie crust is quick and easy. The combination of the saltine cracker crust and the sweet pie interior makes the key lime pie recipe sweet and salty.   Pie crust ingredients: Vegetable cooking spray 1.5 c. Crushed saltine crackers 6 Tbsp. melted butter 1/4 c. Sugar Directions: 1) Combine sugar and crackers in food processor and crush until fine. 2) Add melted butter and process until thoroughly mixed. 3) Lightly grease a 9 inch pie plate with vegetable oil. 4) Set aside until pie filling is completed. Above is the delicious key lime pie in it’s entirety. Add raspberries or slices of lime to taste. Under the camera this slice of key lime pie was literally sublime ( pun slightly intended). Pie filling ingredients: 3 c. sweetened condensed milk 3/4 c. fresh lime juice 1/2 c. sour cream 1 Tbsp. grated lime zest Preheat: 350 degrees Fahrenheit Directions: Combine the condensed milk, lime juice, sour cream and lime zest and mix completely. Pour mixture into the saltine cracker pie crust. Bake pie for 5-8 minutes in the oven until tiny bubbles are evident bursting on the surface of the pie. Place pie in the refrigerator to chill before serving. Garnish with raspberries and serve. Top with whipped cream if desired. Strawberry Cheesecake Smoothie – Travel Animal Doctor

    Even though the summer is coming to an end, the time of the year is not about to mark the end of my smoothie making endeavors.  – Travel Animal Doctor There is too much enjoyment to be had in making smoothies. It is so easy to mix the flavors of different fruits and ingredients.  The taste of a fresh, nutritious and quick breakfast, lunch or dessert is only a minute of blending away. Though sugar was not used in this recipe, the sweet taste of the strawberries and agave nectar are a force to be reckoned with in this smoothie.  At first, the addition of the cottage cheese made me a little hesitant of whether or not I would like the taste of the strawberry cheesecake smoothie.  I have never been a fan of cottage cheese. I also doubted that it would taste like cheesecake at all. Fortunately, the gut feeling that this strawberry cheesecake smoothie recipe would be tasty won over my fears. The flavor really did trick me into thinking that all of the ingredients were the same as ingredients necessary to make a strawberry cheesecake. By watching my sugar intake alone, I have managed to lose 7 lbs this month.  When I get cravings for sugar I still make sure my “sugar cheat” is less than 24 grams. Today I am excited to talk about the spicy Mexican zucchini boats recipe. At my animal health emergency response corp training I met a woman who introduced me to zucchini boats. Enticed by how easy and healthy they looked, I had to come home and try making them for myself.   Even while preparing the spicy Mexican zucchini boats, I was unsure about how they would come out. The spicy Mexican zucchini boats recipe seemed so healthy, that I was concerned it would taste “too healthy”. I’m sure you know what I mean. Like a salad without dressing, or an orange eaten for the 90th day in a row. My fear was that the zucchini would not cook all the way through and that it would come out raw, or that the entire recipe would be a flop and would just not taste that good. Although I was following the spicy Mexican zucchini boat recipe to a tee, I believed we would be merely using the zucchini as a cup to eat the toppings out of. I thought no harm no foul, and it was worth a try.  I am so happy now that although there were uncertainties, this spicy Mexican zucchini boat recipe was tried. I was about to alter the zucchini boat recipe to cook the zucchini first and then put the ingredients in after. I am glad now that I didn’t use this technique. This Minty Cocoa Avocado Smoothie offers the sustenance and energy our family needs in the morning. Ingredients: 2 c. spinach 1 c. chocolate protein powder 1/2 c. water 1 c. unsweetened almond or coconut milk Drop of mint extract OR 1/4 c. mint 1/2 avocado 1 TBSP chocolate chips 4 ice cubes 1 TBSP honey Preparation Time:      10 minutes Serving Size: Serves 1 Directions: Put ingredients in a blender. Blend ingredients until smooth and creamy texture is accomplished. Enjoy your Minty Cocoa Avocado Smoothie! My Review: Combating that fog over my mind in the morning is sometimes no easy feat. While I enjoy coffee every once and a while it is not my go to drink. Since I do not often have caffeine, when I do drink coffee it sometimes makes me jittery for five minutes and then suddenly my energy level plummets. I do not get this same response with the minty cocoa avocado smoothie.  This cocoa avocado smoothie wakes me up and seems to clear that fog away for the rest of the day. The green color can be quite intimidating to those who do not regularly drink smoothies.  While it looks quite bizarre and border-line unappetizing, the taste proves my eyes wrong every time. The cocoa and mint flavors are the prominent tastes in the smoothie. I attribute the creaminess of the smoothie to the avocado and milk. Possible Modifications: Change Thickness: While I only used 1/2 c. of water, I could probably add another 1/2 c. of water if I wanted to adjust the thickness of the smoothie.
