My Review

I really enjoyed this recipe because it made so much with so little ingredients. I did not have to eat a whole lot of it for it to fill me up. My husband did not care for the recipe because he likes a bit more flavor. He also thought the consistency was a bit watery for his tastes.

With the right side dishes I think this main dish would be a great meal. All of the ingredients to create the casserole are relatively cheap. As someone who wants to eat healthy, is watching her weight, and is living on a budget, I would make this dish again.

What I Would Change

Since my husband did not like the consistency, I would probably just play with making it less watery. For added flavor I would probably pair it with a green beans with almonds recipe, and a nice, naturally sweetened smoothie.

The last time I went to the health foods store I bought vegan protein. I could see adding a scoop to the cabbage mixture to make the casserole firmer. I love adding the vegan protein to my smoothies, and it seems to bring me some well needed energy.

Hemp hearts are another alternative protein source readily available at health food stores. This is a great source of protein for vegans and vegetarians. While I use it in my smoothies, I can also see adding it to the bread crumbs on top of the cabbage casserole.  This may be a change I integrate into the recipe in the future.

BON APETIT, and enjoy the baked cream cabbage casserole from Travel Animal Doctor.
