Three Ingredient Phyllo Berry Bites

Three Ingredient Phyllo Berry Bites

If you are looking for a snack to go along with your favorite afternoon tea (my personal preference being the Mayan chocolate truffle black tea), look no further than the Three Ingredient Phyllo Berry Bites. These bitty bites are perfect for a crisp and healthy snack. The brie and berry phyllo bites are a quick and easy snack that takes 20-30 minutes to cook and can be topped with any variety of berries. The phyllo wraps are delicate to use and require soft handling to prevent tearing of individual phyllo sheets. Preheat: 350 degrees Fahrenheit Baking Time: 7-8 minutes Directions: Unroll the phyllo dough and lightly brush melted butter across the top of a sheet. Put a spoonful of brie in the center of each sheet. Place a triad of berries in the center of the brie. Place the cookie sheet of Three Ingredient Phyllo Berry Bites into the oven for 7-8 minutes. The phyllo dough should be crisp with edges that are lightly golden. If preferred, powdered sugar can be added to the edges of the bites for a sweeter taste. The above photograph depicts phyllo wrapped jalapeno poppers alongside of the Three Ingredient Phyllo Berry Bites. As a convenient alternative, a cookie sheet proved to be just as useful as a cupcake pan otherwise could have been to shape these phyllo berry bites to perfection. Warm and fresh out of the oven, these brie berry snacks put a smile on my face. Review: A few phyllo berry bites proved to hit the spot during my afternoon study break. These hors d’oeuvres, along with the phyllo wrapped jalapeno poppers, filled me to perfection. The blueberries...
Pumpkin Hummus

Pumpkin Hummus

For a splash of Halloween fun next year, consider this yummy pumpkin hummus. It takes less than five minutes to make and is an easy addition to a meal or quick snack. With just six ingredients, this pumpkin hummus is easy and convenient. Try this pumpkin hummus today and let me know what you think!   The Easy Pumpkin Hummus Recipe: Ingredients: 2 TBS tahini 2 c. pumpkin 1 garlic clove 1 tsp. olive oil 1/2 tsp. ground cumin salt (to taste) Directions: Combine tahini, pumpkin, garlic clove, olive oil and ground cumin. Mix ingredients completely until smooth. Add salt to taste. Voila! Your pumpkin hummus is ready to eat. Tips and Review: If a fresh clove of garlic is not on hand, minced garlic can be used instead. To avoid putting too much minced garlic in, find a measurement that is equivalent to one clove. The hummus tastes fresh and the pumpkin flavor makes it unique and enjoyably and naturally sweeter than regular hummus. As a firm believer that  half of the taste is in the presentation, the pretty orange color of the hummus is a welcoming sight to behold. I made the mistake of freezing the hummus when the family could not finish it. While freezing is a possible option for your leftover hummus, the condensation tends to water down the hummus.  For this reason, I do not recommend freezing. This appetizer tastes great along with pretzels or fresh baked pita bread. I especially enjoyed choosing my own seasoning for the baked pita bread, and eating it warm and fresh out of the oven.
