Potato Candy

These potato candies will give your partner something to talk about. How about love? Make a change this Valentine’s Day. Switch out those annual chocolates for sweets created with a personal touch. Satisfy your significant other’s sweet tooth with this dulce potato candy.  The typical kitchen ingredients are often found in kitchen cupboards, allowing the chef to make this last minute oftentimes without having to make a run to the grocery store. Ingredients: 1/4 c. mashed potato 2 TBS almond milk 16 oz. powdered sugar 1 tsp. vanilla extract 1/3 c. peanut butter 1 pinch salt 1 TBS powdered sugar (for dusting) Directions: Combine potatoes, vanilla, almond milk and salt in a bowl and stir until mixed completely. Stir sugar into potato mixture, until dough is slightly firm. Refrigerate dough for around an hour to chill. Sprinkle a thin layer of powdered sugar on wax paper and roll out the dough. Spread thin layer of peanut butter on top of the rolled out potato candy dough. Roll the dough like you would tortilla wraps to shape pinwheels, and refrigerate to chill for another hour. Slice pinwheels and shape into hearts to serve. Surprise your valentine with delectable potato candies. The consistency of the dough is slightly firm, easily malleable to flatten. The dough can immediately be rolled out when firm.
