Golden Rice Pilaf

Ingredients: Pinch of saffron 1/2 tsp. of salt 1 c. chopped onion 1 c. chopped carrots 1 c. of white rice 2 TBS of olive oil 1 TBS curry powder Directions: Melt butter in small saucepan over medium heat. Add and cook onion until it is translucent and soft for 3 minutes. Add rice to coat with olive oil and cook on stove for 2 minutes. Stir in the saffron, salt and curry powder. Turn the heat to low and let the rice bake. Cook until rice is tender and has absorbed all the liquid 15 minutes. Remove from heat, and let the rice rest for 5 minutes before serving. The effects of saffron are insurmountable. This herb contains vital nutrients and components, including folic acid, vitamin C, A and B6. The most significant benefit for me is the rich effects that the iron allows within my bloodstream. Saffron contains myoglobin, which is useful to carry oxygen through my bloodstream. The nutritional benefits of iron are beneficial for an individual who intends on pursuing a vegetarian lifestyle.
