Golden Rice Pilaf

Ingredients: Pinch of saffron 1/2 tsp. of salt 1 c. chopped onion 1 c. chopped carrots 1 c. of white rice 2 TBS of olive oil 1 TBS curry powder Directions: Melt butter in small saucepan over medium heat. Add and cook onion until it is translucent and soft for 3 minutes. Add rice to coat with olive oil and cook on stove for 2 minutes. Stir in the saffron, salt and curry powder. Turn the heat to low and let the rice bake. Cook until rice is tender and has absorbed all the liquid 15 minutes. Remove from heat, and let the rice rest for 5 minutes before serving. The effects of saffron are insurmountable. This herb contains vital nutrients and components, including folic acid, vitamin C, A and B6. The most significant benefit for me is the rich effects that the iron allows within my bloodstream. Saffron contains myoglobin, which is useful to carry oxygen through my bloodstream. The nutritional benefits of iron are beneficial for an individual who intends on pursuing a vegetarian lifestyle. Vitamin B6 is also a useful component that allows my body to stay fit with the unique lifestyle choice of eating vegetarian or vegan. Review: The golden rice pilaf filled me to completion. The carrots and saffron provided me a nice daily dose of Vitamin A in a natural and healthy supply. The onions allowed for additional tastebuds to come into play, in order to experience the vast richness that this dish brought to our dinner table. Spiced Phyllo Jalapeno Poppers

These spicy phyllo jalapeno poppers have just the right heat to make your ears smoke. If you are looking for an appetizer to make your tongue roast, these jalapeno poppers may be just the thing you need. Ingredients: 24 halved jalapenos 3 oz Goat cheese 8 TBS cream cheese 2 pinches of thyme 4 TBS red pepper 2 TBS basil 12 sheets phyllo dough cooking spray Cook Time:  20 minutes Serving Size: 2 halves/24 people Directions: Preheat oven to 375 degrees Fahrenheit Stir the cheeses and spices together in a mixing bowl until smooth Spoon the cheese mixture into the center of the spicy phyllo jalapeno popper Dampen the phyllo dough and wrap the filled jalapeno halves up Brush olive oil on the phyllo dough Cut the dough in halves and wrap around each jalapeno half Place poppers on a baking sheet wrapped in tin foil Bake at 375 degrees Fahrenheit for 20 minutes Let cool, and ENJOY your Spiced Phyllo Jalapeno Poppers Review: These spicy jalapeno poppers are packing some heat. With the combination of the basil and the red peppers in the cheese, the fiery sensation of the poppers bring me to my knees. Three Ingredient Phyllo Berry Bites

If you are looking for a snack to go along with your favorite afternoon tea (my personal preference being the Mayan chocolate truffle black tea), look no further than the Three Ingredient Phyllo Berry Bites. These bitty bites are perfect for a crisp and healthy snack. The brie and berry phyllo bites are a quick and easy snack that takes 20-30 minutes to cook and can be topped with any variety of berries. The phyllo wraps are delicate to use and require soft handling to prevent tearing of individual phyllo sheets. Preheat: 350 degrees Fahrenheit Baking Time: 7-8 minutes Directions: Unroll the phyllo dough and lightly brush melted butter across the top of a sheet. Put a spoonful of brie in the center of each sheet. Place a triad of berries in the center of the brie. Place the cookie sheet of Three Ingredient Phyllo Berry Bites into the oven for 7-8 minutes. The phyllo dough should be crisp with edges that are lightly golden. If preferred, powdered sugar can be added to the edges of the bites for a sweeter taste. As a convenient alternative, a cookie sheet proved to be just as useful as a cupcake pan otherwise could have been to shape these phyllo berry bites to perfection.
