Zesty Asparagus and Kale Pasta

This zesty asparagus and kale pasta recipe was a fresh and tasty light meal, perfect to eat after a long and strenuous day. I enjoy it so much, that this dish instantly attracted me and made me want to try it. This was the first time that I have made something with asparagus in it. Usually I eat cooked asparagus by itself. This recipe gave me the opportunity to taste it in a dish. The lemon zest paired well with the asparagus, and together they made the dish taste light and fresh. Ingredients: 12 oz wheat pasta dry 1 c. pasta water 3 c. vegetable stock 2 tbsp cornstarch 1 bunch kale (large pieces cut) 1 lb asparagus, cut to 2 inch long pieces 1 lg crushed garlic clove 1 1/4 tsp salt 1 oz Parmesan cheese, grated 1/4 c. Greek yogurt, plain 1 lemon, sliced and zest Parmesan cheese and ground black pepper (garnish) Serving size: 6 Directions: 1) Cook pasta via directions on package and put aside 1 c. of the pasta water for later 2) Preheat skillet on medium and add 2 c. vegetable broth. 3) Bring to a boil. 4) Whisk cornstarch in 1 c. of vegetable broth and add it to the skillet. 5) After broth becomes thick, add salt and asparagus. 6) Stir asparagus, and vegetable stock mixture. 7) Set heat on low and use a lid to cover the asparagus. 8) Let cook for 4 minutes. 9) Dissolve parmesan cheese into the mixture...
