Potato Chip Cookies

I have been on quite a health food kick lately, so these potato chip cookies were a real treat. Anyone ever get stressed and want to pig out? When I am stressed, it is easy to consume those foods that normally are easy for me to resist. Times like these are perfect to spoil my family and myself with really delicious cookies and potato chips, ALL IN ONE. To make this recipe healthier, butter can be replaced with vegan shortening and the amount of sugar can be adjusted. Serves: 6-9 people (Makes about 18 cookies) Cooking time: 18-20 minutes Preheat oven to: 375 degrees Fahrenheit Ingredients: 2 sticks butter, softened 3/4 c. packed brown sugar 3/4 c. sugar 1 tsp. vanilla 2 large eggs 2 1/4 c. flour 1 tsp. baking soda 3/4 tsp. salt 4 c. crushed potato chips (around 10 oz. divided) 1 c. pecans (optional, chopped and toasted) Directions: 1) Beat together butter and sugars on high speed until fluffy. 2) Add vanilla and eggs and beat in medium speed until combined. 3) Mix dry ingredients (Baking soda, salt and flour) and add to mixture on low speed. 4) Add 2 c. pecans and crushed potato chips. 5) Roll balls into remaining potato chips to coat. 6) Place cookies 2 in. apart on greased ( using cooking spray ) or parchment-lined cookie sheet. 7) Bake 18-2o minutes until golden.   This Sweet and Salty Cookie Recipe Tells a Story: There is a touching story behind this potato chip cookie recipe.
