Easy Bean Salsa The easy bean salsa tastes to me like a fresh and delicious version of a three bean salad. Before making this, all I knew was the three bean salad that came in a can. This, to me, was never very appetizing. My aunt Sue gave me a recipe that serves at least 6 people, and is GREAT to bring to a cook out or a potluck. The sugar and vinegar create a sweet dressing in which the ingredients soak. The combination of all of these earthy ingredients make the dish extremely flavorful, while also remaining very healthy. The recipe mainly consists of vegetables, and contains no animal by-products. It is safe to say that this recipe is completely vegan and vegetarian friendly. Ingredients 15 oz. can of: black eyed peas (rinse and drained) black beans (rinse and drained) pinto beans (rinse and drained) corn (rinse and drained) 1 small jar of diced pimentos (drained) 1 c. of: chopped celery green pepper onion 2-3 finely chopped jalapeños (seeds and stems removed) 1 tsp. salt 1/2 c. oil 1 c. sugar 1/2 tsp. water 3/4 c. apple cider vinegar Directions 1) Thoroughly combine salt, oil, sugar, water and apple cider vinegar and bring to a boil.   Above is a picture of the mixture of salt, oil, sugar, water and apple cider vinegar. 2) Combine the vegetables together (black eyed peas, black beans, pinto beans, corn, diced pimentos, chopped celery, green pepper, onion and jalapeños) and add the apple vinegar solution to the vegetable mixture.   Pictured here are the chopped fresh vegetables. 3) Refrigerate for 4-6 hours.  The easy bean salsa is mixed to perfection. 5) Drain and serve.    Whoop,...
